Taste and flavours

We have placed our kitchen in the hands of Chef Moreno Picchietti, who offers a creative Mediterranean-style cuisine. Chef Pichietti's cuisine is classic, traditional and authentic, with clear, distinctive flavours.

The choice of ingredients, which are always seasonal, is of fundamental importance. The colours and scents of his kitchen are full of love and simplicity, testifying to a true passion fed only by authentic flavours. His love of the countryside comes through in every dish, flavoured with his favourite herbs: marjoram, thyme, juniper and wild dill.
Refinement is blended with tradition: his beloved Tuscany, his travels in the traditions of far-off lands, the odd Venetian touch, with frequent references to regional cuisines from Lazio and northern Italy.

Among the first courses on the menu, his risottos with saffron and mushrooms, lemon or radicchio stand out. He loves to combine the specialities and flavours of land and sea.
His delicious sweet and sour jams and chutneys will have your mouth watering: the tomato, red onion and apple, lemon and cucumber, and pear and vanilla with red wine versions are particularly tasty, and are the perfect accompaniment for a cheese selection: little secrets that will leave you the scent of a lovely memory.
